Our WINES
The Cellar of the Fattoria Del Quondam CelloLocal wines
We produce our wines with grapes grown in vineyards located on the hills at the foot of the Martani Mountains in the Montefalco DOC/DOCG production area.
The entire production process, from grape harvesting to the subsequent processing stages, is carried out by hand and by hand, using traditional equipment.
The transformation method reflects traditional practices in light of current knowledge. This allows us to produce quality wines without the use of invasive technologies and chemical interventions, fully respecting the natural characteristics of the raw materials, which are then reflected in the finished product.
We thus obtain a unique wine as it is the fruit of an irreproducible combination of soil, climate and transformation method.
Decimo Secolo
White Wine
Obtained from Grechetto grapes, destemmed and immediately pressed in the press.
Fermentation with spontaneous yeasts in steel containers without temperature control.
It has a bright and consistent golden yellow colour.
C’era una Volta
White Wine
Obtained from Tuscan Trebbiano grapes and a small part of Grechetto, destemmed and immediately pressed in the press.
Fermentation with spontaneous yeasts in steel barrels without temperature control.
It has a bright and consistent golden yellow colour.
Villam Rosè
Rosé wine
Obtained from Sangiovese grapes, destemmed and immediately pressed in the press.
Fermentation with spontaneous yeasts in steel containers without temperature control.
It has a pale pink colour.
La Verdamasca
Red Wine
Obtained from Sangiovese and Merlot grapes harvested at different times and vinified separately.
The destemmed grapes are placed in vats where fermentation begins spontaneously.
It has a bright ruby red colour.
Monte Stellato
Montefalco Red Wine
Obtained from Sangiovese, Sagrantino, Merlot and Cabernet S. grapes harvested at different times and vinified separately.
The destemmed grapes are placed in vats where fermentation begins spontaneously.
It has an intense red colour with garnet hues.
Normannia
Montefalco Sagrantino Wine
Obtained from 100% Sagrantino grapes typically harvested at the end of October when the phenolic ripeness allows for a consistently powerful but not astringent tannin.
The destemmed grapes are placed in vats where fermentation begins spontaneously.
To the eye it appears to be an intense and compact red colour, almost impenetrable.
